Job Description:
Under the direction of the shift supervisor, the Senior Cook is responsible for providing supervision, team leadership, training and support in the production, service and documentation of multiple food products for multiple stations or units from a specified menu. Follow established timelines for food production as required by customer flow. Adhere to all food handling and sanitation guidelines. Interact with team members and guests in a high volume dining setting. Incumbents typically act as working supervisors for groups of Cooks, Assistant Cooks, Sr. Food Service Workers, Food Service Workers, and Students in the performance of assigned duties. Trains, schedule and supervise the work of Cooks, Assistant Cooks, Sr. Food Service Workers, Food Service Workers, and Students. Maintain quality control through efficient food preparation methods, and may prepare difficult and specialized culinary menus.

COOK, PRINCIPLE

Job Description:
Under the general direction of the Culinary Manager, the Principal Cook is responsible for planning, supervision, cost controls, team leadership, training and support in the production, service and documentation of all food products for a large campus dining unit with multiple stations. Plan menus, utilize leftovers, determine staff assignments and production methods. Follow established timelines for food production as required by customer flow. Assist in taking inventory, determining products, maintaining pars and placing orders. Interact with team members and guests in a high volume dining setting. The Principal Cook is the working shift supervisor for large groups of Sr. Cooks, Cooks, and Assistant Cooks in the performance of assigned duties; ie, training, scheduling, and evaluating the work of Sr. Cooks, Cooks, and Assistant Cooks; maintaining quality and cost controls through efficient food preparation methods; and may prepare specialized culinary menus.

STOREKEEPER

Job Description:
Under the general supervision of the production manager, the Storekeeper is responsible for the proper shipping, receiving, rotation, and security of al items for an assigned Dining operation. Functions as the control point for all incoming products. Provides the communication link between vendor and unit manager. Maintains orderly and clean stockrooms, coolers, and freezers. Assist the manager in conduction inventory, ordering, merchandizing, and maintaining proper par levels.

Job Description:
Under the general direction of the Sr. Food Service Manager of Daily Operations the incumbent will plan, organize, manage and direct the total day-to-day activities, work, and customer service and maintenance functions in a Dining Services Retail or Residence Facility. Participate in the planning, development, preparation and management of unit budgets to ensure proper fiscal controls. Supervise the ordering, receiving, storage and issuing of all assigned products. Develop methods of creatively merchandising and displaying foods. Participate in the planning and service of all menu items in assigned location. Select, train, supervise and evaluate performance of assigned staff. Coordinate the custodial and maintenance functions.

ASSISTANT COOK

Ensure all safety procedures in dish room are followed. Monitor temperature of water in the dish machine. Clean all equipment, such as machines, carts, racks, floor, walls and ceiling daily.
